My Weekend in Pictures, 7/4-7/6

So, this is a somewhat sad compilation of photos from my weekend, however, I thought I’d update everyone on my life because I can. 🙂

The sky was being patriotic.

I made bruschetta burgers for the Fourth of July and paired it with some blue corn chips and creamy spinach dip for a red, white, and blue themed dinner.  My burger recipe will be up sometime in the near future is up now, so go check it out!

On Saturday, we went to the NC Farmer’s Market and I had some fried shrimp from the N.C. Seafood Restaurant for lunch.  I miss having seafood whenever I want it.

2014-07-06 18.35.02 After the farmers market, we went to the flea market, where I bought Gabi a treat from the Bone Appetit Bakery.  She loved it!  I also got myself some Chocolate Pecan fudge, but you better believe I devoured that!  Actually, I just lied.  I didn’t…I still have a quarter of the bar left, I just never took a photo of it.

Sunday, I spent the majority of my day in the kitchen.  I cut up my watermelon, tried my hand at making French macarons (which turned out very well!!), and made, um, I guess I’ll call it ‘watermelon water.’

What I Ate Wednesday, 6/11/14

The start to my day began with beautiful 75-degree weather.  That was at 7:30 this morning.  But when I stepped outside after work…holy cannoli…it was so HOT.  95-degrees hot.  And then mid-drive home, it decided to massive downpour and thunderstorm.  Just a sneak peek to summers in NC is what I call that!

Breakfast

I had to be at work at 8am this morning, so I packed my breakfast just to sleep in a bit later.  On my drive to work, I ate a banana and drank my typical coffee with organic half and half.  I have a picture of the banana, but not one of the coffee because I don’t have three hands!  When I got to work, I ate a peach and ¾ cup of Grape Nuts with the tiniest bit of non-fat organic milk.  I also drank a bottle of water, from my S’well water bottle, which I received in my Pop Sugar box sometime last year…I think it was the Special Edition summer one.  I decided to bring it back out because it keeps my water cold for hours and hours, and with the heat today, I needed that…especially since it takes me so long to drink something.

Lunch

For lunch I had about ¼ of a cup of Blue Diamond smokehouse almonds.  I also had some leftovers from last night…I’ll make a recipe post about this in the near future, but essentially it’s a soup for dinner, that then transitions into a pasta dish for lunch.  It was a lemon chicken orzo, except I used the tiny stars instead of orzo because I’m secretly evil and had to buy the last bag of stars so the little kids couldn’t have them!! Mwahaha.  No really though, I’m like a 7-year old and just really wanted the stars instead.  Ok.  Maybe it was kind of both reasons.  My drink with lunch was a can of V8 Fusion Peach Mango juice.  It amazes me how the combination of sweet potatoes, carrots, tomatoes, apples, oranges, and grapes can make something taste like peach and mango.  Either way, it’s delicious, nothing in it is artifical, and it doesn’t have added sugar.

Afternoon Snack

This new snack that I discovered is like a drug.  Don’t try it unless you want to become addicted like me.   Really though, I’ve come to the point where I have to portion servings out, because if I brought the bag with me to work, I would have consumed over 1000 calories of it because I would have eaten the entire bag.  I’ve done it before…as a matter of fact, it was this past weekend that I did it.  So now that you’re like, “Lynda, what the heck are you talking about?!”…

Behold, the Turtle Chex Mix.  It has caramel corn, caramel covered chex, chocolate powdered chex, chocolate, peanuts, and pretzels.  See…I told you.  It’s essentially a bag full of drugs.  So yeah, that was my snack today.

Dinner

For dinner, my boyfriend and I picked up Olive Garden take out.  I ordered the five-cheese ziti al forno, along with the salad they serve.  I ate the salad before I could take a picture of it as well as the two breadsticks.  I drank water with dinner.

What I Ate Wednesday, 6/4/14

Better late than never, right? I’m sorry if you guys are sick of me! I totally failed at posting this yesterday. I got really sleepy last night and went to bed pretty early. Then I worked all day today, so I’m just now getting around to doing this.

My day started at around 6:30 am yesterday. I rolled out of bed (after hitting the snooze button one too many times), let Rose out to potty, and started making my usual breakfast.

Breakfast

Do I even need to say what it is? Okay, I will…Gluten Free Oatmeal made with almond milk, blueberries, walnuts, cinnamon, and a tiny bit of raw agave. I also had a cup of chai green tea. Really missing my coffee lately! It will be back in my life soon.

Snack

Several hours later, while at work, I ate a Coconut Pie Larabar. I have been obsessed with Larabar’s lately. They are delicious and most of them only have 3-5 ingredients and no added sugar. My favorite flavors are the coconut, cherry, and key lime.

I don’t have a picture of my lunch, but it was leftovers from my dinner the night before which was a taco bowl type thingy. Check my last post for that recipe. It was my attempt at making a copycat burrito bowl from Chipotle. Very tasty!

Snack

After my workout yesterday I decided to make a smoothie. My smoothie was made with frozen blueberries, frozen peaches, spinach, coconut water, and a little 100% apple juice. Yum!

Also, if you guys are looking for a pretty inexpensive blender that works great, this basic Ninja Blender is awesome. It also came with a larger container. Lynda recently got the bigger version, that she talked about in her favorites post. This smaller version works great too though. It has chopped up everything I’ve ever put in it. I even used it to grind up some coffee beans one time.

Dinner

For dinner I made chicken and rice soup. The recipe can be found in my last post. It turned out great and I had plenty leftover for lunch today. Such a comforting and filling meal.

What I Ate Wednesday, 3/5/14

Today’s “What I Ate Wednesday” is brought to you by the letter “S,” for snack time, and the number 5, because that’s how many of them I had today.

But really though.

My schedule today was a bit different than usual, which led to my snacking whenever I was hungry.  I did actually get to make dinner though, but one solid meal is better than none!

At about 6:30am, while I was at work, I made myself a cup of Hawaiian Hazelnut coffee with some half and half.  I ended up not finishing my entire cup, but I would guess that I drank about 12 oz.

Later in the morning, I had a packet of Apples & Cinnamon Quaker Oats Instant Oatmeal.

And then about an hour after that, I had a toasted mini whole-wheat bagel with about a tablespoon of Speculoo’s Cookie Butter (from my January Favorites) spread on it.  It was a pretty thin spread, so you can’t really see it in the picture.

When I got home I grabbed the Tostito’s Scoops bag (essentially the first thing my hand touched when I opened the pantry) because my stomach was growling, and I wasn’t about to try to make something!  I’m impatient and just couldn’t wait.  I ate these with some leftover “Who is Kaiser?” salsa from Moe’s Southwest Grill.  I ate there the other day, and had extra salsa, so I just saved it, and what do you know, it came in handy!

A little later, while I was driving, I ate one of these Gogo Squeez Fast Fruits in the flavor Apple Peach Passion Fruit.  Go ahead.  Judge me.  Everyone that has ever seen me eat one of these does.  They are grossed out by the fact that I’m “drinking it”, but it is really just applesauce in a pouch.  Yes, I am like a kid sometimes.  And yes, I did discover these from the Chick-Fil-A kids meal.

After I walked my dog child, I ate some peaches!  I also made myself some hot Earl Grey tea (from my February Favorites) with 1 ounce of Torani vanilla syrup, and about 3 ounces of cold low fat organic milk.  So delicious!

Dinner

And here we arrive at dinner!  An actual meal; what you’ve all been waiting for!

Since I am going out of town on Saturday, my boyfriend and I decided it would be a good idea to just hold off on trying to grocery shop at all this week, so I had to work with what I had on hand already.  This is usually exciting for me because it means I get to create a new recipe!  Which is exactly what I did…and it turned out great! I’ll just go ahead and call it Baked Teriyaki Pineapple Chicken with rice.  I’ll post the recipe in the near future, but for now, here is a picture of the finished product.  The only thing I wish I had to add to this recipe would be green onion.  And maybe a bell pepper.  I also ate some sea salted edamame as my appetizer.  My drink with dinner was a glass of Simply Apple apple juice.  Because I’m such a child.

Dessert

I was getting crafty after dinner, so I decided to come up with an eggless cookie dough recipe, which ended up being pretty good.  It was yet again, with whatever I already had in my pantry.  I decided to make little phyllo cups of cookie dough for dessert and they were delicious.  I ate two five.  I will post the recipe later, but I will go ahead and warn you, they are not “healthy” in any way.  They are just as bad as the real thing, they just don’t contain eggs, so no salmonella poisoning! Yayy!  But OMG are they delicious!
