What I Ate Wednesday, 3/11/15

I know how excited you are to find out what terrible things I put in my body this Wednesday! 🙂  Let me just preface by saying that if I didn’t consume the number of calories and carbs that I did today, at least once a week, I would probably be non-existent at this point.  It’s carb city over here, guys.

For breakfast, I didn’t have much at home to work with, so I left a bit early for work, and stopped by Panera Bread and picked up an Asiago bagel with cream cheese as well as a hazelnut coffee with cream.  Their Asiago bagels are becoming addicting!

Yes.  You saw it correctly.  I had a frappuccino as part of my lunch.  I drank a tall caramel frappuccino outside in the great weather we had (before it started raining), and ate some leftover pasta I made for dinner the other night.  It was spaghetti noodles with a lemon sauce with shrimp and wilted baby spinach.  Yum! (The recipe will be on the blog soon!)

My snack to keep me awake during the afternoon was a decent amount of M&M’s as well as a Sprite. Gotta have that sugar high to keep me going!

And as if I didn’t eat enough carbs already, my dinner consisted of even more!  We ordered Olive Garden take-out, and I tried the Prosciutto Tortellini Alfredo, which was really good.  I also had their classic salad and 2 breadsticks.

After dinner, I made myself a Rum Chata Hot Chocolate with whipped cream on top.

So now you know what I mean…I had carbs for breakfast, carbs for lunch, and more carbs for dinner!  I do eat lots of pasta, but I usually break it up with something different…not so much today. 🙂  That’s ok though, because everything I ate today was delicious!

What I Ate Wednesday, 1/28/15

It’s that time again! The time where I publicly display what I consumed today through a series of terribly lit pictures. Yay! I know you are all so very excited.

Since I’m such a loyal member of the Starbucks near my job, I had a free beverage or food item loaded onto my gold card (I know, it sounds so fancy. Name on it, and all. You’re allowed to be jealous.). I went this morning and got a small coffee with half and half and one of their bacon, egg, and Gouda breakfast sandwiches. And all I paid for was the coffee.

I had leftovers for lunch at work today. My picture looks really sad, because I ate a good amount of it before I remembered to capture the moment. It’s rice, veggies, and there was some steak, but I devoured that as soon as it came out of the microwave. I drank some water too. Yay hydration!

I was feeling lazy, and we also really need to go to the grocery store (more desperately than you think), so we ordered Papa John’s for dinner. Just your basic pepperoni pizza. Mmm meat, cheese, and carbs. I hydrated some more too.

Snack time! I ate the other half of my Videri dark milk chocolate bar and it was heavenly.

And now, I’m probably going to make myself some hot tea and watch some shows on Hulu before bed.

What I Ate Wednesday, 9/17/14

Happy Wednesday! Hopefully everyone has had a great start to their week and that wherever you are, it’s finally starting to feel like fall. Jumping right into what I had to eat today…


Today was one of my earlier workdays, and if you remember from my previous WIAWs when I worked early, I typically picked up something from somewhere like Bruegger’s or Starbucks on the way to work, but I actually gave myself enough time this morning to eat at home! Don’t worry…it was nothing spectacular.

Breakfast was a bowl of Cheerios (the traditional kind, no special flavors or anything), a cup of English breakfast tea with a teaspoon of honey, and a small glass of Simply orange juice.

Mid-morning Snack

Well. I went to Starbucks. Sigh… I’ve been trying to not eat out as much to save money, but my tea just didn’t cut it when it came to keeping me awake this morning, so I had a small Americano with extra half and half. Oh, I’m sorry. “A Tall.” I also cut up an apple early in the morning for a snack, and clearly didn’t eat it until hours later, so yeah. I ate a slightly browned apple. It was still good, so I don’t care.

My lunch consisted of a small bowl of leftover lasagna, a bottle of water, and some Boom Chicka Pop! kettle corn. So delicious.

Late Afternoon Snack

When I got home from work, I was hungry, so I snacked on some Tostitos dipped in a small snack size pack of Wholly Guacamole.

As my side for dinner, I made a spring mix salad with some shredded cheese, cucumbers, and Italian dressing. My main course was chicken pasta with carrots, corn, and broccoli. I also had a glass of wine, but I only ended up drinking half of it.

I ate some M&M minis as a snack after dinner. I didn’t even know they still made these, until I found a bag of them one night at Walmart. Ahh, nostalgia.

What I Ate Wednesday, 9/10/14

Hey guys! I’m going to try my best to be entertaining in this post, but my head is hurting and I’m a grumpy/sleepy pants, so bear with me. 😛 Also, I didn’t plan any meals for this week and didn’t go grocery shopping either so, as you can imagine, there will be some unhealthy and unimpressive food showcased in this WIAW. I promise to do better next time, okay!



I made my coffee and drank it in between putting on my makeup and getting ready. This particular coffee is by Caribou Coffee and it is some sort of light roast, but I forget what it’s called. I made it with some organic half and half like usual.


20140910_082555I didn’t have much time to make breakfast, so I decided to fry up two eggs. These are my beautiful eggs from the farmers market. I quickly ate my eggs and filled up a water bottle to take with me to work.



I had to run an errand for work and therefore had a good excuse to get coffee…you know, because I was already out and there’s a Starbucks on practically every corner. So yeah, this is me drinking a “tall” Americano with cream. I looked so thrilled. I also managed to capture some artwork in the background.



A beautiful bowl of goodness! Also known as a Chipotle burrito bowl. I think I eat here too much, but oh well. My burrito bowl contains: chicken, black beans, brown rice, pico de gallo, their hot sauce, guacamole, and lettuce.



Yes, this is Cookout food and no, I’m not sorry about it. Well, maybe I am a little. This is what happens when I don’t meal plan guys! Everything just falls apart and I end up eating a bucket of grease. yummmay! To be honest, I wasn’t even that hungry considering I had a pretty big lunch, but I ate some of this anyway. This is the barbecue plate, which as you can see, comes with slaw, french fries and hush puppies.  The cornerstone of every nutritious dinner.  Just so you know, I drank a gazillion ounces of water today like always.

Well, that’s all my food for today. I am now going to get back to watching Cosmos: A Space Time Odyssey on Netflix because I like to have my mind blown a little before bed. What am I even talking about anymore? I shouldn’t be allowed to write a blog post when I’m this tired and also have a headache. I’m sure watching tv isn’t going to help my head situation. But, anyway I highly recommend that you watch Cosmos….even if you’re not a science/space person (which I’m clearly not) because it’s good stuff. Was that convincing? Goodnight guys! What I Ate Wednesday, 9/3/14

Happy almost Thursday! What a fun-filled day of work and heat! If only it actually felt like fall, then the fact that the Pumpkin Spice Latte is officially back at Starbucks would make a little bit more sense. But I guess I’ll go ahead and get right to it; here’s what I had to eat today!


2014-09-03 07.48.41On my drive to work, I drank some English Breakfast tea with a small amount of my Bee Blessed honey from the local farmer’s market. I also ate a slice of bread with a small spread of light margarine and a sprinkle of cinnamon sugar.

When I got to work, I snacked on some sliced strawberries and a sliced peach to complete my breakfast.2014-09-03 08.48.45


My morning snack at work was a small Americano from Starbucks. Not really a “snack,” but I needed something to keep me awake.

2014-09-03 13.16.18For lunch I had leftovers from my dinner last night and a bottle of water. I made my easy Italian chicken, which you can find the recipe for here. I also had a small amount of tri-color rotini pasta to go along with my slice of chicken.

My after lunch snack was multi-grain wheat thins topped with provolone cheese and salami pieces. Delicious!

I bought a pizza from Whole Foods for dinner tonight. I really love their pizza more than most places, and it provides enough for my boyfriend and I to have dinner, but still have leftovers (which makes a great lunch the next day!). They use really healthy ingredients (in comparison to other places), and it’s made in-house. In fact, you can watch them make it if you choose to not shop around the store instead. I also bought a small salad from their salad bar. I had organic spring mix with some Wellspring ranch and shredded cheese. I drank a glass of Monsanto Chianti Classico wine with my dinner.2014-09-03 18.01.19

For dessert, I ate a French vanilla macaron from the bakery at Whole Foods. I also made myself a Roobios chai latte to go with it.

Since I ate dinner so early, I wanted a snack around 8:30pm, so I drove myself to Target (with the Ashley Pants) and got some Twizzler bites (mmm corn syrup…but at least it’s not the high fructose kind!) and some crack. And by crack, I mean, Muddy Buddies Chex Mix. Because now the brand sells it already mixed up in a bag, instead of making you do all the work. But really though, all Chex Mix is crack to me (reference here).

What I Ate Wednesday, 8/27/14

The weather was just beautiful here today. The cool mornings we’ve had the last couple of days are tricking me into thinking Fall is near. In reality, we’ve got a lot more hot and humid days ahead here in North Carolina. It doesn’t help that Starbucks has already busted out their Pumpkin drinks! Too soon!! Anyway, now that you’ve gotten a weather update, on to what I ate today…


20140827_070755My breakfast was…wait for it….oatmeal!! You would have never guessed, I know. I had to kind of eat and put on my makeup at the same time because I was running a little behind this morning. The oatmeal is made with unsweetened almond milk, cinnamon, chopped walnuts, a teaspoon of local honey, and blueberries. The coffee is the same as last week, Larry’s Beans Bolivia roast, with organic half and half.


20140827_121424A typical snack for me at work, a Larabar! This is the coconut cream pie flavor which is probably my favorite one that I’ve tried. I also drank lots of H2O like always.


20140827_135521I made a salad for lunch and I also had some crackers with pepper jack cheese and salami slices. The salad is a spring mix with cucumbers, raw sunflower seeds, feta cheese, dried cranberries, bacon bits, and topped with balsamic vinaigrette. The crackers are gluten-free by this brand called Crunchmaster. They’re really pretty good for something gluten-free. The salami is by the brand Applegate Farms. I really like this brand for deli meats.


20140827_144949They got me again! Stupid Starbucks, why must you be on every corner?! This is a soy iced chai latte. I don’t usually drink soy milk, but I actually prefer the way it tastes with chai lattes.


I made a new recipe tonight that I found on Pinterest. It came from a blog called Honey, Ghee, and Me. This seems to be a pretty popular site, so maybe you have heard of it. The recipe is Spicy Sesame Honey Chicken and it was quite delicious in my opinion. So, thank you Natalie (from Honey, Ghee, and Me) for this recipe!! This is a crockpot recipe, so it is really easy and perfect for busy days when you don’t feel like cooking. The recipe is also gluten free, if that matters to you at all. [click here for the recipe]

Here’s a picture of some of the ingredients. I actually didn’t end up using the jalapeno because it wasn’t very fresh and had been sitting in my fridge for far too many days. I used some red pepper flakes instead.



It doesn’t look as pretty as hers because I didn’t have green onion or sesame seeds…and it was dark out and the lighting sucks. 😦 But it was tasty, so that’s what matters most to me! I put it over brown rice and it was perfect and had just the right amount of spicy and sweet flavor.

What I Ate Wednesday, 7/30/14

Is anyone else wondering how in the world it is already almost August!? Maybe it’s just me, but I feel like this year is flying by. Anyway, today was a pretty good day for me. I went to work, walked my dog, and even managed to workout and cook dinner when I really didn’t feel like it. Go me for not being a lazy pants! So, this is what I ate today…


20140730_063732I drank coffee while I put on my makeup this morning. Don’t mind the messy background. This coffee is SO delicious. It’s from a local coffee roaster called Larry’s Beans. The specific blend is called Woodstock.


I didn’t have time to cook my typical oatmeal, so I settled for 2 scrambled eggs and a slice of 9 sprouted grains toast with grape jelly.


20140730_121711 Not really a snack, but I had a tall Americano from Starbucks while at work. I also drank tons of water all day. I swear I pee pretty much every hour. Yay for hydration!



My lunch was inspired by Lynda’s most recent post of her simple summer salad. My salad is made with spinach and baby spring mix, blueberries, chopped granny smith apple, sunflower seeds, feta cheese, shredded chicken (that I made in the slow cooker yesterday), and balsamic vinaigrette dressing. So yummy!


20140730_160003I ate a banana!20140730_182510 Then after my workout I drank a protein shake. It’s just one scoop of Optimum Nutrition 100% natural whey protein in the flavor vanilla mixed with 8 ounces of unsweetened almond milk.










20140730_201213For dinner I made Zuppa Toscana soup which I’m sure I have mentioned before on a WIAW. It’s probably my boyfriend’s favorite thing that I cook, so obviously I make it for him pretty frequently to make up for all the not-so-great things I cook for him. 😛 I drank some simply apple juice with my dinner and now I’m drinking more water.

What I Ate Wednesday, 7/9/14

I just did not want to get out of bed this morning!  Getting out of bed with only 30 minutes before I needed to leave for work resulted in me not having enough time to pack a lunch…or eat breakfast before work…so don’t mind the fact that all of my meals today were purchased.  Sorry ‘bout it.

Before work, I chugged half a bottle of water because I needed some of that H2O.

For breakfast I had a bacon, egg, and Gouda sandwich from Starbucks along with a medium, oh excuse me, ‘grande’ Caramel Macchiato.

During the day I drank a mixture of black tea and lemonade, which I grabbed from my fridge this morning before heading to work.

I ate lunch at Panera Bread and I’m sure you can guess what I ordered.  Yup.  I got a cup of Lemon Chicken Orzo Soup.  I also ate a bag of their chips and drank a cup of water with a lemon wedge.

On my way home from work, I ate a That’s It bar.  I love these things.  The bar I had was apple blueberry flavored, and guess what the ingredients are?  1 apple.  And 20 blueberries.  That’s It.  You see what they did there?  Yeah.  And they are soooo good!  I’ve had the other flavors before and they all kind of remind me of those fruit leathers I used to eat as a kid, except these are definitely much healthier.

My boyfriend and I got dinner from Chipotle tonight.  I got a chicken bowl with brown rice, lettuce, cheese, and black beans.  I drank more water with dinner tonight, and my after dinner snack was handfuls upon handfuls of Goldfish from that giant container they sell that’s bigger than my head.  No shame.

What I Ate Wednesday, 7/2/14

Hey guys! Happy Wednesday! I hope your week is going well and hopefully this is a short week for most of you guys thanks to Independence Day. Keeping my fingers crossed that this tropical storm threatening to hit the east coast doesn’t ruin all of the fourth of July festivities for us! I had a pretty busy day today between work and running errands, so I actually didn’t eat very much. Here is what I did manage to eat today…


Fotor0702203434Are you shocked!? It’s not oatmeal. I made some muffins on Monday night and I had a couple left, so I figured I better eat them. These are peanut butter banana muffins, which I made on Monday spur of the moment and just happened to have all of the ingredients on hand. They turned out pretty good. They are not overly sweet, so they’re perfect for breakfast. The recipe I used can be found here. I also had one scrambled egg and some strawberries and delicious blueberries from the farmers market. I had some coffee with organic half and half in my adorable coffee mug from Marshals. If you can’t see it, it says “luv my cup of joe”.


Fotor0702203629I didn’t really eat lunch. I just munched on a bunch of raw mixed nuts. These came from Target. I tend to buy a big huge container of them so there’s always something quick to munch on if I am busy but going into starvation meltdown mode.

20140702_172206We picked up food from Jasmin Mediterranean Restaurant for dinner. This is a chicken zaki with a side salad. Oh, how I love Greek and Mediterranean Food! I would eat it everyday if I could afford it. I also had water with this and some throughout the day, although I didn’t drink nearly as much water as I usually do.

I think I will make myself a big glass of water now and call it a night! Thanks for reading.

What I Ate Wednesday, 5/21/14

Today was a pretty good day! It was my dog, Rose’s 3rd birthday and we got to have a doggy play date/walkie with Lynda and her dog, Gabi. I always make a huge deal out of Rose’s birthdays because well, she’s my baby and I’m thankful for every year I get to have with her. She brings so much happiness to my life, so why not spoil her a little bit extra one day out of the year! Anyway, moving on to what you’re here for…



My breakfast was the same as usual…only not the same at all. This is gluten-free oatmeal (Bob’s Red Mill Gluten Free Quick Rolled Oats) made with unsweetened almond milk, a chopped granny smith apple, some cinnamon, chopped walnuts, and a little bit of agave nectar. Delicious! The beverage next to the oatmeal is not in fact really weak coffee. It’s green tea (Yogi blueberry green tea to be exact) and although it is good, it’s not coffee :-/If you have followed any of my WIAW’s from the past you will know that this breakfast is different from what I normally have (the gluten free, almond milk, agave nectar, and green tea part). I am writing a post all about this very soon, but long story short…I am following an elimination diet for at least 21 days. This is not a diet to lose weight! This is strictly experimental and something I am doing for work purposes and just out of curiosity. Basically, I have eliminated gluten, dairy, sugar, red meat, COFFEE, processed food, and pretty much any food/drink that causes inflammation or is a common allergen. I promise I don’t hate myself. 🙂 Anyway, more on this later.


*Cue excuses for not having a picture* I was really hungry and also in a hurry before going to work, so I scarfed down my food before even thinking about taking a picture. I’m sorry! I will describe it to you though, so use your imagination. I had what I’ll just call a sad mexican bowl leftover from dinner the night before. It was ground turkey with some cumin and other seasonings, black beans, and brown rice. I wanted some guacamole on it, but the guac I had made the day before was already going bad. Anyone know a trick to keep guacamole fresh for longer?? Anyway, that’s all I had. Not too impressive.



I went to Starbucks after work (I guess because I wanted to torture myself with the fact that I can’t have coffee??). I was just feeling a little tired and wanted something cold and refreshing, so I got pretty much the only thing I can have right now besides water- iced, unsweetened green tea. It was good…as good as green tea can be I guess.


When I got home I ate a handful of raw, unsalted nuts (I didn’t eat the pistachios) and drank the rest of my tea.


IMG_20140521_190814_028My dinner was Pan-Roasted Chicken with Mushrooms and Rosemary, quinoa, and peas. I had water to drink. I was really impressed with how this chicken turned out. It was really delicious and I will definitely be making it again. Seriously, give it a try! I would even venture to say that this is one of the best chicken recipes I’ve ever made.
