What I Ate Wednesday, 3/19/14

I really hope this icky Wednesday was actually the last day of Winter…I mean, it was officially, but I’d really appreciate some warmer weather!  Anyways, down to business, here’s what I ate today:

 Breakfast

Reeeeeeally early in the morning, while driving to work, I drank a cup of Simply Apple apple juice out of my Minion cup from Universal Studios.  Once I got to work, I made myself a 12 oz. cup of coffee with half and half.  Around 9:30am, I was really hungry, so I had a cup of Special K Vanilla Almond cereal with about 1.5 oz of fat free milk added- literally just enough milk to make the cereal just the slightest bit wet.  And then, I had another cup of it, because I was just that hungry.

After work, I stopped at Kroger to pick up some groceries, and on my way home, I snacked on a Slim Jim.  I find it very hard to only eat just one of these, but I resisted the urge to eat the whole box, and I just had one.

My lunch was a chick pea salad and a carrot.  Yes, just one carrot.  A whole one.  And I ate it like Bugs Bunny.  Don’t judge.  I also had another Minion cup full of apple juice.

 Snack 2

So this isn’t really a “snack” per se, but I did make some cupcakes for a co-workers birthday and I definitely ate the remnants of batter at the bottom of the bowl.  It was red velvet, and yes, I consumed raw egg.  Oh well.  I think I’ll be ok.  It was worth it.

For dinner, I made a salad and what I call bruschetta burgers.  At some point, I’ll post my recipe for my bruschetta burgers but they are essentially burgers with Italian seasonings and cheeses added to the meat.  The burgers are then topped with diced roma tomatoes, balsamic vinegar, and basil.  They are finished off with a slice of provolone cheese.  My salad was a baby spinach salad.  I added bacon, walnuts, raspberries, strawberries, sesame seeds, goat cheese, and a low-fat raspberry vinaigrette.
