Quick and Easy Tuna Salad

I’ve posted photos of this a few times in my What I Ate Wednesday posts, and I even think Ashley has mentioned this once before in one of hers as well, so I thought it only appropriate that this tuna salad finally have it’s own little recipe post by now! It’s really simple to make, and only requires 4 ingredients. I also have my mom to thank for showing me this simple recipe when I was little.

1 5 oz. can of StarKist Chunk Light Tuna in Water, drained (will yield 4oz. of tuna)

A dash of Garlic Salt

1 teaspoon Sweet Relish

2 teaspoons Mayonnaise

Combine all ingredients in a bowl, and mix together.

Takes 5 minutes to prepare.

You can eat it with crackers like Ashley usually does, or you can put it on a sandwich with whatever you’d like! I usually make mine on honey wheat bread with some spinach leaves or spring mix. If you like raw tomatoes and onions, those are also good options to top off your sandwich. And if you aren’t trying to eat a bunch of carbs, or you’re just not terribly hungry, skip the crackers and bread, and eat it out of a bowl (I do this a lot too)!

Tuna is great because it is a naturally high protein food, contains Omega-3s, and is low in fat and cholesterol. Tuna also contains high levels of selenium, which helps our bodies create antioxidant enzymes.

Super Simple Summer Salad

Yay alliteration!

I just made this salad for dinner tonight because I wasn’t really in the mood to cook anything and I also spent much of my day outside, which resulted in me wanting something to cool down. This salad is very quick to make, and can easily be topped with grilled chicken to add extra protein.

I’m not going to include my measurements for what I added to my salad because you can add more/less based on what you’d like in yours!

Ingredients:

Baby spring mix

Golden delicious apple, diced

Strawberries, sliced

Cucumber, sliced

Granola

Walnuts, crushed

Sunflower seeds

Crumbled blue cheese

Balsamic vinaigrette

Time it takes to make: 10 minutes

Servings: As many as you’d like, I made 1 serving 🙂

Lynda’s Strawberry Cucumber Salad

Happy Sunday!  I was experimenting in the kitchen earlier today out of boredom, and came up with this delicious cucumber and strawberry salad, and thought I’d share!  My inspiration was the Cloister Honey I got at an event in Raleigh late last year.  I wanted to make something with it, and I was in an appetizer kinda mood.

 Lynda’s Strawberry Cucumber Salad

 Ingredients:

2 tbsp Newman’s Own Balsamic Vinaigrette

2 tbsp Cloister Lemon Honey (or whichever honey you prefer)

Strawberries (I used half of a container)

½ a large cucumber

For the dressing:

The honey that I used is actually a solid honey, but you can use whatever you have on hand.  I added my honey, crushed mint, and balsamic vinegar to a small bowl and mixed it until it was a smooth glaze consistency.

 For the salad:

I used a potato peeler to peel off alternating parts of the cucumber.  I then sliced the cucumber and strawberry into thin circular pieces.  I added the strawberry and cucumber slices into a circular bowl, alternating each layer.

Once all the strawberry and cucumber slices are in the bowl, drizzle all of the dressing on top, and enjoy!
